Delicious Breakfast Bowls For A Perfect Start Into The Day

Healthy eating starts with a great breakfast 

Early in the morning, it can be tough to leave the comfort of your warm bed. Especially on Monday’s, it’s easy to hit the snooze button and turn over a couple of times, before you have enough energy to face the day. Once you’ve finally made it to your feet, you drag yourself into the kitchen for the first coffee of the day.

Does that sound familiar to you? My boyfriend is definitely not a morning person. Me on the other hand, I’ve never had trouble starting the day with a bright smile. My dearest just gives me an irritated look when I bounce out of bed, and talk about my plans for the day.

 

Caffeine? No need.

How come it’s so easy for me to leave my cozy bed? I strongly suspect it’s my breakfast habits. While I’m still in bed, I’m already thinking about the delicious breakfast bowl I’m about to prepare. Yes, it is true. For me, sleep is like a time machine that transports me to breakfast. Is there anything better than enjoying the first, calm hours of the day, and taking the time for a wonderful breakfast? I have so many sweet childhood memories of sitting together with my family over Sunday brunch. Why not celebrate breakfast every day, and make it something special? The thought alone relaxes me! So while my boyfriend hits snooze for the third time, I’m already checking out the content of the fridge. I see a lot of yummy treats, which doesn’t make the decision any easier. What do I feel like having? A refreshing yellow smoothie, or some banana ice-cream. Or even pancakes. Not a bad idea!

But today, I feel like something fancy:

Breakfast bowls aren’t just trendy, they’re also incredibly delicious!

I see a jar filled with small, round chia seeds. Next to it, there’s the purple açaí powder. Don’t worry, if you’ve never heard these words before. Chia and açaí, pronounced “ah-sigh-ee“, belong to the range of superfoods that most health-conscious foodies now swear on, even though they were hardly know in our part of the world only a couple of years ago. Luckily, these superfoods made their way into our stores, because they are super versatile and healthy!

What exactly are Chia and Açaí ?

Chia:

Has been cultivated in Latin America for centuries, and is considered a very valuable staple food. The small seeds are rich in vitamins, omega-3-fatty-acids, proteins, and minerals. They’re very popular with athletes and in the vegan cuisine, because they deliver long-lasting energy, without making you feel heavy and too full. No wonder, since “chia“ means “strength“. Chia seeds are the first choice for my breakfast bowls!

Açaí:

Also known as the “Amazonian Superfruit“, it’s supposed to be the fountain of youth of all superfoods. The açaí berry, from which the powder is made, grows in Brazil and is enjoyed there with almost every meal. During a semester abroad in São Paulo, I had enough time to taste all the variants of açaí. Still, my favorite way to enjoy it, is in a sweet breakfast bowl!

You already suspected it:

I love good food, and like sharing it with others even more. This is why I came up with three easy recipes for your next challenge, which you can use to quickly create your own breakfast bowls. Getting up in the morning will suddenly be much more fun!

Recipe: Banana Island Chia Bowl

Imagine you wake up on Monday morning, your stomach rumbling, but the fridge is empty. There are merely two overdue bananas left in the fruit basket. Hopeless, you think. Nonsense, say I! Even in this case, you’ll be able to create a wonderfully satisfying breakfast bowl with just a few extra ingredients.

All you need are a few spoonfuls of chia seeds, which you should always have in storage anyway, and a little liquid, ideally almond or soy milk. This is how you save your week:

Ingredients:

  • 2 ripe bananas
  • 4 tsp chia seeds
  • 1 cup almond milk
  • 1 tsp agave syrup
  • 1/2 tsp cinnamon
  • As topping: Berries, apples, almonds, cashews, raisins, coconut flakes, etc.

To prepare:

  1. Take your bowl of choice, and add the peeled bananas. Mash them up with a fork until creamy. If you’re as impatient as me, use a mixer.
  2. Add the chia seeds, syrup, cinnamon, and mix well.
  3. Stir in the almond milk and place the bowl into the fridge for 20 minutes. For an even result, stir once or twice while you wait.
  4. Take your bowl out of the fridge, and top it off with all the fruits, nuts, or superfoods you desire.
  5. Your yummy breakfast is ready! Enjoy.

Recipe: Brazilian Beauty Açaí Bowl with Coconut Rawnola

If you feel like something more cool and refreshing in the morning, you’re going to love this breakfast bowl idea! Açaí is easy to process, which the morning grumps of you will appreciate. Keep a pack of açaí powder in your pantry, and you’ll always be ready to make amazing breakfast bowls.

As a special, I like topping off my açaí with „rawnola“. As the word creation from “raw” and “granola” indicates, rawnola is a kind of muesli, that doesn't require baking. Instead of being crunchy, rawnola is soft and delicious. By the way, once you’ve prepared the rawnola, it’s super easy to repurpose the dough, and form bliss balls. But that’s another story…

Ingredients - Açaí:

  • 2 ripe, frozen bananas
  • 1/2 cup frozen blueberries
  • 2 tbsp açaí powder
  • 1 tbsp agave syrup

Ingredients - Rawnola:

  • 10 pitted Medjool dates
  • 1/2 cup oats
  • 1/2 coconut flakes
  • 2-3 tbsp water

Preparation:

  1. For the rawnola, mix dates, oats, coconut flakes, and water in your blender until crumbly. Put aside. Using tupperware, you can keep the rawnola in the fridge for up to five days, by the way - if you haven’t noshed it all up by then ;)
  2. For the açaí, give all of the ingredients into your blender and mix on the highest level, until you get a creamy result. You might have to add a little almond milk, if your blender isn't strong enough.
  3. Pour your açaí into a bowl, and top it off with the rawnola and some fruit, if you like.
  4. Voilà! This is how quickly you can prepare a nutritious and healthy breakfast bowl. Bon Appetit!

Recipe: Mango Lemon Chia Bowl

On some days I wake up, and all I want is something really fruity and fresh for breakfast. I love mangoes, so I always keep a few chunks in the freezer. Soy yogurt is also always at hand. With a couple more ingredients, this makes a wonderful chia pudding breakfast bowl. If I have a fresh mango, I like to prepare a 3-minute-mango creme, which I serve on top of the chia pudding. By the way: this combination looks super pretty when served in a little glass jar. Try it out!

Ingredients:

  • 1,5 cups soy yogurt
  • 1 cup frozen mango
  • 2 tbsp agave syrup
  • 1 tbsp lemon juice
  • 4 tbsp chia seeds
  • ripe mango
  • As topping: Fresh mango, pomegranate, coconut flakes, chia seeds, etc.

Preparation:

  1. Give yogurt, frozen mango, syrup, and lemon juice into a blender, and mix well until creamy.
  2. Pour the mixture into a bowl, stir in the chia seeds.
  3. Cover the bowl, and put it in the fridge. It takes about 20 minutes for the chia to soak up all the liquid.
  4. In the meantime, prepare the mango creme: Give fresh mango chunks into your blender, and mix until creamy. Done! Keep a few flakes of fresh mango as a topping, if you like.
  5. Remove the bowl from the fridge, and top it with the mango creme, and other ingredients, such as coconut flakes, banana, pomegranate, nuts, or whatever you feel like.
