3 Delicious Pomegranate Recipes - Your Senses Will Explode

POMEGRANATE SHOULD BE PART OF A HEALTHY DIET. HERE ARE 3 DELICIOUS RECIPES

Pomegranate is a true superfood and beauty food. The pomegranate pips are delicious and very healthy: they contain an abundance of vitamin C, protect the cells, have anti-inflammatory properties and keep you young. That's exactly why you shouldn’t miss out on these delicious pomegranate recipes!

Tip: Roll the pomegranate back and forth a few times on the work surface before slicing it. This loosens the pips, making them easier to remove!

Pomegranate Recipe 1: Spinach Salad with Quinoa and Pomegranate Seeds

Ingredients per serving:

  • 2 Handfuls young spinach
  • 50 g of quinoa
  • Pips of ¼ pomegranate
  • 1 radish
  • 2 tbsp mixed nuts (eg cashews, walnuts, ...)
  • Olive oil
  • White wine vinegar
  • Salt & pepper

Zubereitung:

  1. Boil the quinoa in water until al dente (approx. 12 minutes).
  2. In the meantime, wash the spinach, remove the pomegranate seeds and, chop the nuts.
  3. Strain the quinoa after cooking.
  4. Arrange the spinach on a plate. Add the quinoa on top, then scatter the radish slices, pomegranate seeds, and nuts over it.
  5. Drizzle a marinade of vinegar, oil, salt, and pepper over it.

Pomegranate Recipe 2: Grilled Aubergine with Hummus and Pomegranate Seeds

Ingredients per person:

  • ½ eggplant
  • 3 tbsp hummus
  • ¼ pomegranate
  • Olive oil
  • Salt & pepper
  • Chili
  • Herbs for garnishing

Preparation:

  1. Cut the eggplant into slices about ½ cm thick, and place on a baking sheet.
  2. Put it in the oven and bake for approx. 20 minutes at 180°C.
  3. In the meantime, remove the pomegranate seeds, and collect 2 tbsp of pomegranate juice.
  4. Mix the hummus with the juice.
  5. Arrange the eggplant slices on a plate. Sprinkle with olive oil, and season.
  6. Spread the hummus on top, and sprinkle with pomegranate seeds and herbs.

Pomegranate Recipe 3: Yoghurt Cream with Pomegranate Seeds

Ingredients per serving:

  • 100 g yoghurt
  • 50 g of quark
  • ¼ pomegranate
  • Mint for garnish

Preparation:

  1. Mix yoghurt and curd.
  2. Gently stir in the juice of the pomegranate piece, set aside some seeds for garnish.
  3. Pour the cream into a nice glass, spread the pomegranate seeds on top, and garnish with mint.
