Although broccoli is packed with vitamins, many people will avoid it at all cost. For no reason!

Broccoli has twice as much vitamin C than kale and is in fact one of the vitamin C richest veggies on earth. 

It also contains a whole lot of calcium. A medium-sized serving would cover your daily need. It comes with beta-carotene, which is transformed into vitamin A - a vitamin that regulates cell growth and supports the proper functioning of our immune system.

Last but not least, broccoli contains a whole lot of magnesium, which helps your body in producing protein and supports muscle growth. It aids the regeneration of your muscles and increases your overall performance. You see, leaving broccoli out of your meal plan, would be a big mistake.

Since broccoli is low in calories and grown locally, so it’s very cheap. During winter, broccoli can be purchased frozen, which makes preparation even easier.

Broccoli is a Multi-Talent

Broccoli is the multi-talent of veggies. It’s great in pasta, curries, stews and salad. And works well in meat, fish and vegetarian dishes. 

What many people do not know: Broccoli can be consumed raw. Therefore we’ve picked three delicious recipes that will make your taste-buds wiggle.

Broccoli Recipe Number 1: Broccoli Croquettes

Ingredients:

  • 1 broccoli, medium-sized and cooked
  • 1 small onion, diced

  • 2 tbsp buckwheat flour

  • 1 egg
  • 50 g feta

  • 1 garlic clove, diced

  • A pinch of salt
  • 2 tbsp coconut oil

Preparation:

  1. In a blender, mix broccoli, egg, feta, garlic and salt. 
  2. Form little balls and fry them in a pan with a little coconut oil.

Tip:

Broccoli croquettes are a great side dish for fish and tofu dishes.

Broccoli Recipe Number 2: Broccoli Soup

Ingredients:

  • 1 broccoli
  • 800 ml vegetable broth

  • 1 small onion, diced

  • 2 garlic clove, diced

  • 100 ml soy yogurt

  • 2 tbsp coconut oil

  • a pinch of salt

Preparation:

  1. Break the broccoli in little pieces and fry it with the garlic and onion in coconut oil, using a big pot.
  2. Add the vegetable broth and cook for 20 minutes.
  3. Then puree with a hand blender and add salt and pepper.

Broccoli Recipe Number 3: Broccoli Salad With Tahini Dressing

Ingredients for salad:

  • 1 broccoli
  • 250 g chickpeas
  • 250 g mushrooms
  • 1 avocado
  • 50 g pomegranate seeds
  • 1 apple
  • 4 tbsp walnuts

Ingredients for dressing:

  • 3 tbsp tahini
  • 1 tbsp lemon juice
  • Pepper and salt

Preparation:

  1. Break the broccoli into little pieces, quarter the mushrooms, cut the avocado and apple into little chunks. Give everything in a big bowl and add chickpeas, pomegranate seeds and walnuts.
  2. Prepare the tahini dressing by blending the ingredients in a small bowl.

  3. Serve the salad with the tahini dressing.
