This is how you prepare a Summer-Inspired Vinaigrette - also a great choice in winter

Vinaigrette…before writing this article, I had to find out how to actually write this word. Not that easy! (:

What exactly is a vinaigrette? A vinaigrette is a salad dressing or sauce, which is made with the following ingredients:

Oil, vinegar or an acidic juice (e.g. lime juice) + spices + if needed mustard or egg yolk.

During summer time, it’s convenient to use citrus fruits or seasonal fruits. They give the vinaigrette a summery, fresh and sassy flavor.

3 Summer Salads With The Perfect Vinaigrette - Recipe

Recipe No. 1: „White Wine - Grape Juice“

Salad Ingredients:

  • 150 g arugula
  • 1 handful of white grapes
  • 1/2 can of pear balls
  • some fresh mint
  • 1 handful of walnuts
  • Some blue cheese (vegan alternative: soft tofu)

Vinaigrette Ingredients: 

  • 1 tbsp olive oil
  • 3 tbsp white wine
  • Some salt
  • Some maple syrup


The salad is super easy to prepare. Give the arugula into a bowl, cut the grapes in half, and give them and the walnuts on top. Pour out the water from your can of pears, and add the pears to the salad. Add cheese or tofu cut into little cubes, plus fresh mint and you’re done!

Simply mix the vinaigrette ingredients and give them on the salad. Enjoy!

Recipe No. 2: Tomatoes meet Onions - Salad

Salad Ingredients:

  • 300 g colored mini tomatoes
  • 1 red onion
  • 1 handful of cress
  • 1 slice of spelt bread 

Vinaigrette Ingredients:

  • 4 tbsp flaxseed oil
  • Juice of a lime
  • Some sea salt and pepper
  • Some mustard


Cut the tomatoes in half and give them into a bowl. Cut the onions in rings and give the onion rings into the bowl. Give the cress onto the salad. Spelt or wholemeal bread complete the meal. 

For the vinaigrette simply squeeze the lime and add the other ingredients to the juice.

Recipe No. 3: Asparagus Salad

Salad Ingredients:

  • Mixed greens of your choice 
  • 200 g fresh, green asparagus
  • 50 g hazelnuts
  • 30 g parmesan

Vinaigrette Ingredients:

  • 4 tbsp olive oil 
  • 2 tbsp asparagus juice 
  • 1 those yogurt 
  • Spices of your choice


Give the asparagus into a preheated pan. Add a little water and lightly braise the asparagus for 2 minutes. From the pan, take the juice for the vinaigrette. Now add some oil and fry the asparagus (on the grill if you like).

Give the asparagus on the salad bed and add chopped hazelnuts. Lastly, give the parmesan on top, cut into very thin slices.

Prepare the vinaigrette from the asparagus juice and the rest of the ingredients. Blend everything and cool for 15 minutes.

Bonus - Recipe From The 3dots Summer Salad Challenge:

Salad Ingredients:

  • 100 g green leaves
  • 50 g watermelon
  • 1 handful of blueberries
  • 50 g prawns
  • 50 g feta cheese

Vinaigrette Ingredients:

  • 3 tbsp flaxseed oil
  • 6 tbsp berry juice 
  • Some maple syrup


Fry the prawns in a little oil. Feel free to use vegan alternatives (e.g. tofu). Add the prawns to the salad. Cut the melon and the feta cheese into little cubes and add them with the berries to the salad. 

Use berry juice from the organic market or blend a handful of berries into a juice to prepare your vinaigrette. Mix all other ingredients and you’re all done!
